The Bilimbi is a fast-growing tropical fruit tree related to starfruit, native to Southeast Asia. It produces clusters of small, green, cucumber-like fruits that grow directly on the trunk and branches. The fruit is extremely sour and is widely used in cooking as a natural souring agent, similar to lemon or tamarind, in curries, soups, and pickles. The tree is highly productive, often fruiting year-round in warm climates, and is also valued in traditional medicine.
