Released in 2013, UF Gem is a good option of a peach variety to grow in the northern region of central Florida. It features a nearly 100% blush, an average fruit diameter of 2.5 inches, and a symmetrical shape. It is a clingstone type with firm, non-melting yellow flesh. UFGem peaches have a sweet, sub-acidic flavor with excellent eating quality.
